Explore how food technologies and techniques can change the taste and texture of food to create a unique dining experience! Dana is going to show this class some fun tricks that can be used to to make dishes that are Top Chef worthy ;)

Menu:

  • Shaved beet salad with pomegranate gel matt, balsamic pearls, parsnip crumble and goat’s cheese foam (Experimenting  with Agar and gelatin)

  • Pan seared pork tenderloin with potatoes, celery root and garlic puree, pickled mushrooms and sautéed greens (Experimenting with sous vide cooking)

  • Carrot cake with carrot gel, cream cheese powder, sour cherry clouds, and sponge toffee (Experimenting with Agar, Maltodextrin powder, versa whip, and baking soda)

Class Style:

This class is a Night Out style. For a night out class the group comes together to create various parts of the menu. There will be a few specific learning points throughout the cooking portion of the evening with an emphasis on a beautiful three course meal enjoyed by the group after preparation.  Beer and wine available for purchase.
