  1. Root Vegetable Salad: Balsamic Pearls, Beet Root Gel, and Charred Onion Foam 

    Experimenting with Agar, Gelatin and CO2

  2. Mustard Crusted Pork Tenderloin with Butternut Squash: Compressed Apples and Smoked Tomato Cream Sauce

    Experimenting with Vaccum Sealilng and Souvide Cooking

  3. Chocolate Hazelnut Mousse Cake: Crispy Feuilletine, Sponge Toffee and Nutella Powder  

    Experimenting with Baking Soda, Gelatin and Tapioca Maltodextrin 

Class Style:

This class is a Night Out style. For a night out class the group comes together to create various parts of the menu. There will be a few specific learning points throughout the cooking portion of the evening with an emphasis on a beautiful three course meal enjoyed by the group after preparation.  Beer and wine available for purchase.
